Normally, I am not a fan of Margaritas. Tequila and I usually do not get along (so much so that I might just write a “5 Reasons…” about it to elaborate at some point), but awhile back a friend convinced me to try a Prickly Pear Margarita. I was so pleasantly surprised that I resolved to go home and look up a recipe to make them for my next get together… and then promptly forgot upon finishing the drink. Months later while perusing recipes on the internet I came across this recipe from 20 Something Cupcakes for the one tequilla drink I actually enjoyed in the last decade and had to share it with you!
If you’ve never had anything flavored with Prickly Pear Syrup (which you’ll need to purchase to make this yummy drink), it is best described as a mix between watermelon, strawberries, and kiwi. I don’t know how it does it, but the Prickly Pear Syrup actually makes tequila taste less like something I should be using to remove nail polish and more like something I want to be drinking. The recipe from 20 Something Cupcakes also includes orange liqueur, which adds a little kick to the prickly pear’s sweetness and rounds out this perfect little margarita.
